Water may be replaced with chicken stock for more flavor but it will no more vegan Water must be as much that is 1 inch higher to the rice level Let it simmer at high flame with partially covering of a lid Let the water evaporate, check with intervals When 80% water evaporates and few bubbles start to appear at the surface then it is time to cook with steam You can add green chili slices at this stage but it is optional Check the texture and consistency of moisture at this stage Put a skillet at the stove at very low flame, put the rice pot over it and cover with a damp cloth Finally cover with a lid to avoid steam leakage.
